***NIKKICRUMPET COOKS***

I know you read that title and thought to yourself...hah whats the punch line?
Either that or...did hell freeze over?....did pigs fly?




Nope....I really did cook something...and I'm gonna share with you the easiest thing you're ever gonna make for dinner this side of a PB & J sandwich! And it's YUMMO!


This is a picture of how it's gonna look. Now no laughing at my recipe torn page from magazine card. It's obvious by it's condition that I cram this in a drawer cook this a lot!



Here is everything you're gonna need...not much to it...but that's the beauty of this meal. You're family is gonna think you slaved away all day in the kitchen. But they would be WRONG. Prep time...oh about 3 minutes!

You can use any kind of bottle sauce. But if you have this brand...and this flavor...MAGNIFICO!!!

First thing....preheat the white box (stainless if you're all hoity toity) to 375 degrees.





Then put a little bit of the sauce in the bottom...mix a couple tablespoons of Parmesan cheese in with the sauce (I don't measure I just dump some). Then put a package of chicken into the dish. I usually wear garden gloves for this step...cuz chicken is all gross and slimy! ewww. Then pour the rest of the sauce on. One jar will do it...but my hubby likes it SAUCY...so I use a jar and a half...and shake what my momma gave me while I'm doing it! This usually gets me a nice ear nuzzle and a kiss! (from the hubby not the dogs)




And that's it for now...I told you...3 minutes! well 4 if you get an extra long kiss WOO HOO cooking is FUN! Now settle down and put it in the oven (covered with that shiny metal stuff) for about 30 minutes give or take.


Okay...now here is the tricky part.....boil some water for the penne pasta (we use rotini cuz he likes it better)....I know I said it was easy....I forgot about this technical stuff!!!




While the water is boiling and now that the 30 or so minutes are up...take out the pan and sprinkle some mozzarella cheese and some more Parmesan cheese on the top. I have no idea how much you're supposed to use...but I LIKE IT CHEESY!

Cook it UNCOVERED for 10 more minutes while the pasta is cooking...


AND.....TADA! this is how it looks done. Now just serve this yumminess on top of the pasta and you got yourself a tasty meal for no effort at all! No stirring, no mixing, no measuring....we're talking cooking for dummies kitchen divas!



It may not be GOURMET....but my hubby loves it...of course...he's pretty easy to please...he married me didn't he!

This is EXACTLY the type of recipe I need and the level of instruction! If my family wouldn't starve if I didn't cook something, I would never cook. I hate it and I'm bad at it. But just dumping things in a dish and cooking it -- espcially dumping lots of cheese -- is my kind of dish! And I like all these things. And I never measure the good items -- like cheese -- either! Hi Nikki....First, Kudo's for using a good jarred sauce and not Ragu'....sorry for all you Ragu fans. Good pasta, cheese isn't a bad choice...I must say I make this all the time on my "hoity-toity" 15 yr. old stainless range but I've never tried just putting the chicken uncooked into the baking pan....I egg and bread crumb before frying up in olive oil...I kinda like your way better...one less step and one less dirty pan to wash....the guys should be proud...!! You could be the next "TOP CHEF"....

By the by, I posted a really easy and terrifically tasty recipe on my blog yesterday. It's for "cooking divas" like us and is always a crowd-pleaser! (I didn't take pictures of the making of the recipe though, so you'll have to use your imagination a bit there. Besides, no cute Oz or Crumpet to gaze beseechingly into the camera at my house anyhow, just the crazy cat who is busily yacking up hairballs all over my Christmas tree skirt and the kiddo's ginormous, carny goldfish who doesn't get downstairs much to gape in openmouthed amazement at my cooking. Though the fish does "gape" quite well.....)

I came over to see pigs flyin' and was glad I did. I may have to try that one of these nights. You could do what I did tonight...put a bunch of frozen burritos in a big pan, poured canned enchilada sauce over them, sprinkeled with tons of cheese and cooked em. Voila...enchiladas...he he!

I came back to make a grocery list. I will share my ultimate recipe. I buy the best looking frozen pizza at the grocery and cook it (my mom always said when you are a working mom, the first thing you do when you come home is, turn the oven to 350, lol). You can add sun-dried tomatoes, extra peppers, even little slivers of apple, if it's that sort of pizza.

After the pizza cooks, add a bunch of fresh herbs, crumbled bacon, avocadoes (optional) and that's it. Come to think of it, a bacon-lettuce-tomato (the prechopped stuff) and avocado pizza with basil would be sooooo good. And you can also do a plain cheese pizza, add chicken and apples and bacon. The sky's the limit! My son the chef told me this all purpose, I'm-Too-Busy-To-Cook recipt. It's so easy, but those herbs make it seem as if you've gone to trouble :-)

My guys are going to be thrilled to be eating chicken and pasta tonight.They will come here and worship you!!!!!

Ooh, wanna make that little dish even EASIER? Throw all those ingredients into a large dutch oven on the stove, and simmer the pasta in the sauce until it is done. The pasta comes out super creamy and yummy. (Probably 'cause the pasta is MELTED. Oh well - it tases good. ;-))

That looks very carb-y and delicious (in my book all things carb-y ARE delicious) and also easy, and I would totally try to make it if I hadn't already sworn off all things cooking after my last disgusting Crock Pot experience.

Maybe I'll pass it on to the hubs, though, and let HIM make it for me.
