Either that or...did hell freeze over?....did pigs fly?
Nope....I really did cook something...and I'm gonna share with you the easiest thing you're ever gonna make for dinner this side of a PB & J sandwich! And it's YUMMO!
This is a picture of how it's gonna look. Now no laughing at my recipe torn page from magazine card. It's obvious by it's condition that I cram this in a drawer cook this a lot!
Here is everything you're gonna need...not much to it...but that's the beauty of this meal. You're family is gonna think you slaved away all day in the kitchen. But they would be WRONG. Prep time...oh about 3 minutes!
You can use any kind of bottle sauce. But if you have this brand...and this flavor...MAGNIFICO!!!
First thing....preheat the white box (stainless if you're all hoity toity) to 375 degrees.
Then put a little bit of the sauce in the bottom...mix a couple tablespoons of Parmesan cheese in with the sauce (I don't measure I just dump some). Then put a package of chicken into the dish. I usually wear garden gloves for this step...cuz chicken is all gross and slimy! ewww. Then pour the rest of the sauce on. One jar will do it...but my hubby likes it SAUCY...so I use a jar and a half...and shake what my momma gave me while I'm doing it! This usually gets me a nice ear nuzzle and a kiss! (from the hubby not the dogs)
And that's it for now...I told you...3 minutes! well 4 if you get an extra long kiss WOO HOO cooking is FUN! Now settle down and put it in the oven (covered with that shiny metal stuff) for about 30 minutes give or take.
Okay...now here is the tricky part.....boil some water for the penne pasta (we use rotini cuz he likes it better)....I know I said it was easy....I forgot about this technical stuff!!!
While the water is boiling and now that the 30 or so minutes are up...take out the pan and sprinkle some mozzarella cheese and some more Parmesan cheese on the top. I have no idea how much you're supposed to use...but I LIKE IT CHEESY!
Cook it UNCOVERED for 10 more minutes while the pasta is cooking...
AND.....TADA! this is how it looks done. Now just serve this yumminess on top of the pasta and you got yourself a tasty meal for no effort at all! No stirring, no mixing, no measuring....we're talking cooking for dummies kitchen divas!
It may not be GOURMET....but my hubby loves it...of course...he's pretty easy to please...he married me didn't he!

You sound like my kinda cook! LOL
I think I'll try this recipe. Maybe I won't burn anything. LOL
Diane
Saucy AND cheesy?! Be still my arteries.
But you forgot one important step...uncork, pour and imbibe.
The red wine will counteract the constriction.
Cheers! Em
This is the perfect recipe for these busy days. Thanks.
Looks yummy and I LOVE easy. Like the touch of adding the pups, they are so cute.
Cheri
MMMMmmmm! Looks delicious, and I'm all about that 4 min. prep! :)
I have to cook this for sure!! I love how the dogs put in their two cents worth in this recipe too. I think you've been holding out on us and you're really a female Emeril!! LOL! Cindy
I'm all about eazy schmeazy in the kitchen.... oh, and saying TADA when I'm done... lmao
The recipe looks great!
Di
The Blue Ridge Gal
I'll take it...hold the chicken..lol! chicken is NOT my friend right now!
Mmm...comfort food! Yum. I love the flying pig photo as well. You are hilarious!
u crack me up!! THAT LOOKS SO DELISH!!!!! WAY TO GO!!! :) OK SO HOW DO YOU GET THE CAPTIONS IN YOUR PICTURES??
Now THAT is my kind of meal!!! Looks great and so EASY!!!
Way to go, Nikki!! I bet you really cook more than you let on. Give us more recipes with Ozzy & Crumpet comments! Have a great day. Sally
Morning Nikki! Well my chicken is just about at the expiration date so this will be tonight's dinner! Love easy!!!! Have a great day - Sincerely, Jeannette
This is EXACTLY the type of recipe I need and the level of instruction! If my family wouldn't starve if I didn't cook something, I would never cook. I hate it and I'm bad at it. But just dumping things in a dish and cooking it -- espcially dumping lots of cheese -- is my kind of dish! And I like all these things. And I never measure the good items -- like cheese -- either! Best Post On Cooking I've Seen. (my very own made up on the spot award -- no cute button or anything but no rules either!)
Yummy - my kind of almost cooking! Your dogs had me laughin'- they know when things aren't "right"!
LOVE your Hank music playing. Perfect for your post. OK let me see, are you really trying to tell me that the big square box under the burners on my stove actually DOES something????
Mmmm, sounds de-lish! I like easy recipes because I'm not the best cook either, hehe...thanks goodness my husband is a great one!
I love how you have your doggies talking in your posts...they are quite hillarious!
Hilarious dogs. And yes - I can really burn water - really!
Nikki, I bet you were watching that water boil! You look like a good cook to me! can I come over for left overs? :)
Hi Nikki....First, Kudo's for using a good jarred sauce and not Ragu'....sorry for all you Ragu fans. Good pasta, cheese isn't a bad choice...I must say I make this all the time on my "hoity-toity" 15 yr. old stainless range but I've never tried just putting the chicken uncooked into the baking pan....I egg and bread crumb before frying up in olive oil...I kinda like your way better...one less step and one less dirty pan to wash....the guys should be proud...!! You could be the next "TOP CHEF"....
That actually looked quite tasty! :-) I might have to try that some day!!
DID you have the same kind of sauce under AND over the chicken??
HAha I just LOVE your dogs!! :-) They are soooo funny! ;-)
Monica
Quick and easy--my kinda recipe. This may be dinner tonight...
You are so freaking funny! I love reading your blog. :)
Ooooh that looks scrumptious!
By the by, I posted a really easy and terrifically tasty recipe on my blog yesterday. It's for "cooking divas" like us and is always a crowd-pleaser! (I didn't take pictures of the making of the recipe though, so you'll have to use your imagination a bit there. Besides, no cute Oz or Crumpet to gaze beseechingly into the camera at my house anyhow, just the crazy cat who is busily yacking up hairballs all over my Christmas tree skirt and the kiddo's ginormous, carny goldfish who doesn't get downstairs much to gape in openmouthed amazement at my cooking. Though the fish does "gape" quite well.....)
Heck Nikki! I'M SOLD! And I didn't even have to write it down. That's my kind of recipe. Yep, this is one I will be trying! YOU IRON CHEF YOU! LOL!!! Deb
Looks so delish, I'm going to make this one. I am the queen of opening boxes, bags and containers to put a meal together. And I'll just bet your a good cook too.
Love Ya,
Chris
LOL!!!! Watch out Paula's Home Cooking, Here comes "Nikki's White Box of Delights." (LOL)

Nikki - this sounds yummy!
I am a big fan of jars and the wonderfully prepared ingredients they contain. I also love cans with the name Campbell's on them.
I fit in really well with the Semi-Homemade camp with Sandra Lee on Food Network.
Good Morning, Nikki and those cute little doggies. The three of you sure whipped up a great looking meal. I'll have to give it a try. Hardly any work and it looks so..yummy.
Hugs, Terrie
hehe you are too funny, seriously that Chicken pasta looks delicious move over Sandra Lee, here comes Nikki and her little helpers Oz and Crumpet!.
I think even I could handle that one!!
I love your humor! Looks yummy, but I'll pass as the hubby is allergic to chicken.
I think my computer froze for just a minute when it saw the title.
Looks yummy! Did the dogs get any?
Looks DELISH and EASY....my kind of cooking! You little puppies are "TOO FUNNY". They must be a hoot to be around. Thanks for sharing your recipe. Susan
Now that's my kind of cookin'! If I can't prepare it in under 5 minutes, it ain't happenin'.
Well Tammy...if I say "yes" is anyone gonna report me to the ASPCA...I know you're not supposed to feed them people food...but dang they love a little bite or two of pasta and a nibble of chicken. Shhhh don't tell!
I knew we were soul mates, but had NO idea you didn't cook either. I really didn't think I could love you more than I did. Let's do a cooking show together. We can talk, laugh and drink wine while we have some hunka man cooking in the backgound. It will be HIT!!!
This is so great. So proud of you. This looks absolutely delicious. The dogs loved the cook in you Nikki.
Hey, pigs really do fly you know :)
You've got so much going on in your world, Nikki, I don't know how you find the time to do all this. Anything with pasta suits me and even though I do enjoy cooking I gotta say - I'd happily sit and share a bowl of this with you any day
I think that's an excellent new name for you...saucy!! This I will try because I too am a kitchen diva, gonna get me an apron with that on it.
now that's my kinda cooking! I hate cooking!
love the helpers you have!
That sounds like great comfort food, Nikki ! Fairly easy to make and yummy :)
Yum.. I always shake what momma gave me, but my huby just rolls his eyes. lol

Hi Nikki, I am definitely trying this recipe, especially if it earns me a big long kiss! Woohoo! It looks delicious! And I like it quick, my meals that is! ;) LOL! ~hugs, Rhonda
You know, I'm having hubby's co-workers over next week for lunch, and that looks ALOT easier than fixing a bunch of appetizers. We may just do that & some salad & bread...so THANKS...I think I cook about as much as you do! :O)
You three cooking in the kitchen are hilarious! I need to get some little helpers like that...they are just too cute!...I dont cook much either...but maybe I could try that....maybe...I mean if YOU can do it... ~Cindy~
That looks so yummy! I'm gonna have to try it out soon! Thanks!
Just found your blog & wanted to say hi. That looks delicious!
Mmmmmm this really does sound good! I occassionally cause a bit of shock and awe in my household when I turn the oven on too. Sometimes I cook just to get a reaction!
That looks YUMMO! I am definitely giving that a try. Fortunately my MIL never cooked. So according to my husband, anything I make seems gourmet to him! He is impressed when there are more than 2 pots on the stove! (yes, he is a hamburger helper man, when left to his own devices to make dinner)
This looks really good and boy it is easy. Thank you for sharing! So did you share it with Crumpet & Oz? Hugs, Bobbi Jo
That final picture turned out pretty good. Looks like you made enough for all of us. What time is dinner?
Hey, I bet you would of gotten a longer kiss if you had just been cooking in your apron, and shaking what your mama gave you. lol.
I hope Crummie and Ozzie got a taste of that chicken. They are so cute.
Ginger
Ooohhhh that looks soooo YUMMY!!! And easy is what I'm all about.....That really didn't come out right, but you kwim?! Did you share with your two little kitchen helpers? Cause they really were helpful with the commentary! *winks* Vanna

Looks YUMMY!
You sure get a lot of attention for cooking... that doesn't happen in my house... perhaps I should cook less and then they will REALLY appreciate me like your fans!
LOL... knowing my hubby he would just say IT'S ABOUT TIME! I get no respect... LOL
May have to try that recipe... YUM!
Shipping your parcel today!
Ok ok... don't scream soooooo LOUD!
Yes, I am laughing and enjoyed every moment of your cooking experience and romantic antics:-) I devoured it (The scrumptious dish, not the scene in my head) up with my eyes and DOUBLE YUM!
I knew for one who knew kitchens like you do, you also needed to KNOW what a cook needs to function.
We will enjoy this wonderful dish next week.
Thanks for sharing, Nikki:-)
Lots of hugs,
Beth~♥
Whoah, a recipe that even I have all the ingredients for! Awesome!
I'll be making this ASAP.

Yippee Skippy! I think even this dumb blond may be able to pull this one off. YAHOO!!!
Love new and easy recipes. I've tried a few of Pickets too. I've made her vegetable soup 3 times!!
I've now got your yummy chicken recipe in the oven as I'm writing this!!! I'll let you know what the family thinks.
Looks delish! Kind of like a chicken lasagne! Do your dogs love it? My pooch always gets to have a little of what we are having. Hubby says he's spoiled, I say he is my taste tester :-)
I will definitely try this recipe! We are having a pre-X-mas get together with friends and I was wondering what I would make! With some cheesy garlic bread of course!
Nikki I am sooo proud of you girl! LoL! Great job-looks so yummy and hey it's sooo easy too! I think I might just give that recipe a whirl-I am always looking for something easy cuz I am such a (lazy cook)busy girl!
~Tam :P
90% of the time, I love easy!! This looks great.
I'm all over it! Yum.
And I love the "shake what your momma gave ya" quote. Funny.
Be careful! You might start a whole cooking habit! We don't need you making the rest of us look bad with your overachieving ways!
You are so stinkin' funny! AND, dang, look at how many comments you have... funny AND popular!
Nikki cooks???...well, then pigs do fly...heehee...we all know you are pulling our legs about not being a cook...hey, you raised 3 kids!!You are quite a "dish" yourself... ;-) Bo
I came over to see pigs flyin' and was glad I did. I may have to try that one of these nights. You could do what I did tonight...put a bunch of frozen burritos in a big pan, poured canned enchilada sauce over them, sprinkeled with tons of cheese and cooked em. Voila...enchiladas...he he!
You know what? I may just have to give this a try! I'm not a cook and I have to come up with ideas that are quick and easy to handle after a long day of work.
And yeah, I believed you cooked, because hell ehhh heck, did FREEZE over - it SNOWED here in New Orleans this morning!!
Oh, that looks delicious and so easy! I'm going to try this one out. Enjoyed your dogs' thoughts while you were cooking! Sometimes, I feel like I can read my dog's mind, but yours just have the perfect expressions on their little faces. laurie
I usually wouldn't bother adding to 85! comments but those dogs are soo cute and funny!
You just may have saved my sorry self. :-) My family is all bent out of shape because I'm setting tablescapes and NOT COOKING any freaking food! Ha! This sounds great. And my mean men will love it.
Hugs,
Gollum
Nikki girl I did't know you cooked...love those fur babies girl...they are just the cutest things..the recipes looks easy and at my age its all about easy..thanks for sharing,,,hugs and smiles Gloria
OMG! :::::::::::covering eyes and shaking head::::::::::: You did not just post a recipe using jar sauce! And the chicken! Girl, you've gotta cut off the fat, and then cut out the cartilage... unless it's the bone-in kind. EWwwwwwwwwwwwwwwww! LOL
Justine :o )
You are a queen! My husband would love that, too. May he go eat at your house? ;-)
This is EXACTLY the kind of recipe I like - easy. And won't kill me when I'm already tired from the day I had and I don't want to try and slave over some... not easy recipe.
Nikki, what a yummy looking easy recipe! I bet Jacob would like it, too. ~ Robyn
Looks Delish :D
mmmm, that's looks delish, I'm impressed!! Your pups should give you more credit, their mommy can cook!!
That looks really good! I'm all about easy meals!
Love the song!! That looks yummy Nikki :)
How do you cross out the words when you do a post? I tried one time but couldn't figure it out.
I LOVED THE CHICKEN!!! It was a big hit and I will make it A LOT!!! It was so YUMMY.
It's going on next week's menu!
I thought you are in Rachel Ray's 30 minute meal eh? hahaha...good... i will try to cook on Saturday and just dump those stuff too. I am getting hungry by just looking at it.By the way, I got a tag for you and I guess you might like it...just guessing , LOL! Post it anytime. If not, that's fine with me too. (Sigh)
Awesome! And now I'm hungry - thanks a whole lot.
P.S. - Please don't tell my husband that there are women out there who actually COOK MEALS for their HUSBANDS. I've got him convinced that all that silliness went out with covered wagons.
Okay?
XO
A.
Hilarious, as usual. This is my kind of cooking. And why is it men love us even more when we are in the kitchen...and yes you have to uncork a bottle of red, pour and drink up too....
Dear Nikki, You are an inspiration to all of us. Your dinner looks delicious. Happy day!
I left a comment on your Dog for sale post. Thanks for the laughs and the recipe.
Becky
Nikki, I will try this soon...It looks like something my family would love!!! Thanks for sharing! Nancy
Gosh girl...I saw the name of your post and I had to rub my eyes to make sure I was on the right blog! lol lol hey I have some of those crumpled (well used) magazine pages in a drawer also! This sounds great girl...and I'm with you on the garden gloves for handling chicken!!!! You need a scratch & sniff on here girl....NO I DIDN'T MEAN THE DOGS!!!!! have a great weekend Nikki!
I think I'll give it a try! Looks yummy:)
I thought it was a variation on "Nikki crumpet rocks!" and thought, "YEAH BABY!" and then thought how cool it was to tag yourself lol... and realized that was possibly one reason I love ya baby...
sounds delish! quick and easy for the holidays, all the rushing cooking and sigh, studying.
I came back to make a grocery list. I will share my ultimate recipe. I buy the best looking frozen pizza at the grocery and cook it (my mom always said when you are a working mom, the first thing you do when you come home is, turn the oven to 350, lol). You can add sun-dried tomatoes, extra peppers, even little slivers of apple, if it's that sort of pizza.
After the pizza cooks, add a bunch of fresh herbs, crumbled bacon, avocadoes (optional) and that's it. Come to think of it, a bacon-lettuce-tomato (the prechopped stuff) and avocado pizza with basil would be sooooo good. And you can also do a plain cheese pizza, add chicken and apples and bacon. The sky's the limit! My son the chef told me this all purpose, I'm-Too-Busy-To-Cook recipt. It's so easy, but those herbs make it seem as if you've gone to trouble :-)
My guys are going to be thrilled to be eating chicken and pasta tonight. They will come here and worship you!!!!!
Hugs,
Gollum
Alright, LuckyMe lured me over with her stolen Christmas tree...and I think I'll be staying around for a while!
Ooh, wanna make that little dish even EASIER? Throw all those ingredients into a large dutch oven on the stove, and simmer the pasta in the sauce until it is done. The pasta comes out super creamy and yummy. (Probably 'cause the pasta is MELTED. Oh well - it tases good. ;-))
LOL see...your puppies at least were lucid...mine would have just PASSED out! LOL
By the way, I wonder if I have a kitchen? LOL LOL
Now this is MY kind of recipe. I need the easy peasy ones. And if it involves cheese I'm ALL for it.
I've got a better idea. Why don't you come over for dinner. You can cook and then clean up. Doesn't that sound AWESOME?
I'll provide the wine.
That is my kind of cooking. Easy peezy with loads of cheesy!
You know Nikki - I'm looking at your post again and you and I have the exact same granite tops!! I guess great minds think alike!!
Have a great weekend ~
Once again...the Interwebs! It's what's for dinner. This is going in my, " So easy even *I* can't screw it up" recipe box! I betcha we make it this weekend.
If you want another easy one, make the sirloin tips I posted the other day.
Sheesh though, somehow I gotta work cat and dog conversations into my recipe posts! LMAO! Like my cats would put up with me doing that. LMAO!
dammit. You cook one lousy chicken in sauce and don't burn the water and get 117 friggin comments? Where do I go to complain.
I just drooled saliva onto my sleeve. How embarassing.
Keep the recipes coming. I need to become a better cook if I'm ever gonna catch a man.
Just because I'm 47 doesn't mean that there is no hope.
Awesome Nikki, I am always on the lookout for a quickie...meal that is...LOL
Hey I am beginning to worry about myself it's almost like I can read your dogs minds......
Have a nice week-end,
Kathy :)
Oh my stars, woman, it took me two hours just to scroll down past all of these comments!! I will have to try this recipe because I'm all about easy. And I want to snuggle with your dogs. They have the cutest faces!!
Looks mighty tasty. I'm not sure how good the cheese for your arteries though.
yummo! nice job, martha!
Hey Nikki thanks girl for coming by..wished I had been home I would have blessed you..hope you have a great night...hugs and smiles Gloria
Yummmy!
Those poor puppies - they're so unloved. LOL.
Miss Nikki, I venture to guess that you could do anything amazing if you just set your mind to it.
That looks AMAZING!!!!!!
LOL! You're right about the boots. I can deal with the eclectic bizzare taste she has in clothes bz at least she's covered. For some reason modesty has really never been an issue around here (knock on wood). Have a great weekend and thanks for stopping by!!
Love those pictures~
That looks very carb-y and delicious (in my book all things carb-y ARE delicious) and also easy, and I would totally try to make it if I hadn't already sworn off all things cooking after my last disgusting Crock Pot experience.
Maybe I'll pass it on to the hubs, though, and let HIM make it for me.
Nikki,
With the weather forecast sounding so drastic in your 'neck of the woods' know we are thinking and praying for you and your family:)
STAY WARM!
I see you are a cooking diva like myself! My husband turns the stove on occasionally, just to make sure it still works...in case we ever MIGHT need it.
I made this last night..my pup had that same look of fear on her face! lol
It was great! the kids loved it!
have a great weekend funny girl
You are just the funniest sweetest lady EVER!!!. I loved looking at your Christmas Shwag! VERY cool stuff! Seems everyone loves you as much as I do...uh maybe more cuz I haven't sent you anything yet...got to talk to Santa about that one ;)
Stopped in from SITS, I'm cooking challenged as well and am going to try this recipe, if somethine can go wrong with me it will but this seems like a safe procedure I'm going to give it a go!
I came for dinner two days ago and never left. I'm snooping around your kitchen wishing for more leftover...if you want me gone, you're going to have to boot me out!
That's my kind of recipe! I'll have to give it a try...I'm all about quick and easy when it comes to cooking!
Love the comments from Crumpie and Oz, lol!
Quick and easy...what I'm all about (don't ask my husband though)tehe. Looks so good...will be giving it a try.

I am so all about quick and easy...and this looks so good! Now, did the doggies get any of it?? Kipper wants to know!
Your music just scared the crap out of me! Do you usually get 139 comments on a post? You are a super star!
Nikki, I made this for dinner and the boys licked the pan clean. Thanks for all of the technical advice on this. It was a snap and absolutely delish!!!!
